Vegan guacamole recipe for meal prepping

Guacamole might just be Mexico’s greatest culinary gift to the world, although there are plenty of strong contenders.  The best thing about guacamole is it’s easy to make, full of healthy nutrients, and it’s the perfect vegan snack! 

What kind of avocado should I use?

Before we jump into the recipe, I want to make sure you know how to choose the right avocado for making guacamole.

You should only make guacamole using haas avocados.  They’re full of flavor and have enough actual fruit (yes, avocado is a fruit) to make peeling and chopping it worthwhile.  Smaller types of avocado are often mostly the stone and very little fruit.

How to pick the perfect avocado for guacamole

A perfectly ripe avocado for guacamole should be a little soft to the touch at the wider end.  Too ripe and or too hard and the recipe won’t taste right!

Gently press the avocado and make sure it’s not hard, and not completely mushy either.  Don’t go squashing all the avocados at the store to find the right one, a very gentle squeeze without damaging the fruit will be enough to test for ripeness.

Easy & healthy guacamole for vegan snacking

Creamy Mexican guacamole that’s ideal for healthy snacking between meals.  Serve on a piece of wholegrain bread, with nachos, or on a corn tortilla.  You can use it as a dip for carrots or celery if you’re feeling extra healthy!  The serrano or jalapeño pepper is optional, so leave it out if you’re not a fan of spicy food.

Ingredients

2 haas avocados (peeled, pitted)

1 cup tomatoes (chopped)

¼ cup cilantro (chopped)

¼ cup onion (finely chopped)

2 tablespoons lime juice

1 serrano or jalapeño pepper (minced, seeds removed) optional

Salt & pepper to taste

How to prepare

1 – Mash the avocados in a bowl until smooth and creamy.

2 – Add the tomatoes, cilantro, onions, and serrano/jalapeño pepper.  Mix well until you get an even consistency.

3 – Once everything is mixed really well, add the lime juice and salt & pepper.  Mix thoroughly again and serve!
